Challenge Recipe
RULES: ALL FOOD WILL BE CUT AND SOLD AT AUCTION.We do not accept exhibits that require refrigeration. All food must be cooled and placed in a re-sealable plastic bag. (Large cakes are exempted from this rule.) All food must be on a plate that can go to auction. All entries must include a complete recipe. (Please use a 3"x5" index card.) No box mixes (except specific category). All winning recipes become the property of the Hardwick Community Fair. All food must be made by exhibitor. Please note required amounts for some items. (When in doubt or not specified, 7 items on a plate.) RIBBONS ONLY.

Challenge Recipe
BANANA UPSIDE DOWN CAKE
Ingredients:
½ cup packed brown sugar
2 tablespoons lemon juice
1 tablespoon butter or margarine
½ cup pecan halves
2 medium firm bananas, sliced
Cake:
1½ cups all-purpose flour
½ cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
1 cup plain yogurt
2 eggs, beaten
2 teaspoons grated lemon peel
1 teaspoon vanilla extract
Directions: In a small saucepan, combine brown sugar, 1 tablespoon of lemon juice
and butter; bring to a boil. Reduce heat to medium; cook without
stirring until the sugar is dissolved. Pour into a greased 9-inch
springform or baking pan. Arrange pecans on top with flat sides up. Pour
remaining teaspoon of lemon juice into a small bowl; add the bananas and stir carefully. Drain. Arrange the bananas in a circular pattern over the
pecans; set aside. In a large bowl, combine the flour, sugar, baking
soda, baking powder and salt. Cut in butter until the mixture resembles
coarse crumbs. Combine yogurt, eggs, lemon peel and vanilla. Stir into
the dry ingredients just until moistened. Spoon over bananas. Bake at
375 degrees Fahrenheit for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes. Run a knife around edge of
pan; invert cake onto a serving plate.
